Banana chocolate chip muffins (vegan + gluten free)

Bring the aromas of fall baking to your home with these easy to make & tasty muffins

Ingredients:

- 2 flaxseed eggs (2 tbsp ground flaxseeds & 6 tbsp water)
- 1 cup oat flour
- 1/3 cup coconut sugar
- 1 tbsp baking powder
- 1/4 tsp salt
- 1 tsp vanilla extract
- 3 ripe bananas (mashed)
- 1/4 cup non dairy milk
- 1/4 unsweetened applesauce
- vegan chocolate chips (as many as your heart desires)

*Be sure to look for vegan, gluten free, refined sugar free ingredient options

Step-by-step:

1. Preheat oven to 350 F

2. Prepare your flaxseed egg by combining the flaxseed + water and allowing to sit for 5 min

3. Mash the bananas in a medium bowl

4. Add the flaxseed egg and combine

5. Whisk in applesauce and nondairy milk

6. In a separate bowl, whisk together your dry ingredients

7. Slowly fold dry ingredients into wet ingredients

8. Pour the mixture into a muffin tin (divide into 12/use coconut oil to oil the tin first if not using non stick)

9. Place in oven for 20-25 minutes

10. Allow to cool slightly, and enjoy!
