Creamy and delicious pasta sauce made from plants

Ingredients:

  • 1 cup cashews

  • 1/4 cup hummus

  • 1 small carrot

  • 1 small zucchini

  • 1 small yellow bell pepper

  • 2-3 cloves garlic

  • 1 small onion

  • 1 cup veggie broth

  • 1 pack pasta of choice (gluten free if desired)

    Salt & pepper as needed

Step-by-step:

  1. 1. Soak your cashews in hot water for at least 20 minutes

  2. 2. While your cashews are soaking, prepare your veggies (chop, peel, wash all veggies)

  3. 3. In a small saucepan on medium heat, cook all veggies (onions, garlic, carrots, zucchini, bell pepper) until soft

  4. 4. Allow to cool

  5. 5. Add your soaked, drained, and slightly cooled cashews into a blender/food processor, along with your cooked veggies and hummus

  6. 6. Blend together until smooth texture is reached

  7. 7. Use right away with cooked pasta or store in fridge in sealed container
