Green Goddess Pasta sauce

Enjoy delicious pasta and sneak in some extra greens!

Ingredients:

  • 2 tbsp olive oil

  • 1 cup cashews

  • 1 cup coconut milk

  • 1 small onion

  • 1 cup frozen green peas

  • 2 cups spinach

  • 1/2 cup veggie broth

    Salt & pepper as needed

Step-by-step:

  1. 1. Soak your cashews in hot water for at least 20 minutes

  2. 2. While your cashews are soaking, add 2 tbsp of olive oil to a medium pan on medium heat

  3. 3. When pan is warm, add onion and allow to caramelize slightly

  4. 4. Add in your frozen green peas, coconut milk, and veggie broth

  5. 5. Allow to cook for 10-12 minutes (until peas are cooked through)

  6. 6. Stir in spinach and allow to soften

  7. 7. To a blender, add your soaked & drained cashews, along with the rest of your ingredients in the saucepan (allow to cook slightly before transferring

  8. 8. Blend until a smooth & creamy consistency is reached

  9. 9. Add salt & pepper as needed

  10. 10. Use immediately on cooked pasta, or store in fridge for up to 3 days!
