Purple sweet potato hash
Ground your mornings with this nourishing & tasty sweet potato hash
Ingredients:
- 2 medium purple sweet potatoes (washed and cubed; can sub for another type of sweet potato)
- 1 yellow bell pepper (washed and diced)
- 1/2 onion (diced)
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tbsp nutritional yeast (optional but can add a nice flavor and some vitamin B12)
- 1/2 tsp salt
- 1/2 tsp ground black pepper
Step-by-step:
1.Preheat oven to 350°F
2. Chop your sweet potatoes, pepper, and onion into small cubes
3. Add your vegetables + seasonings to a medium-sized bowl
4. Add in the avocado oil, Italian seasoning, salt, and pepper
5. Using a large spoon, mix the ingredients together
5. On a large non-stick baking tray, add your hash and spread it out (you can use a reusable baking sheet here to help ensure sweet potatoes don't stick to the pan or burn)
6. Once the oven is preheated, place your hash in the oven for about 30-35 minutes, or until the sweet potatoes are soft
7. Allow to cool for a bit, serve, and enjoy!
