Lava Cake Baked Oats (vegan)

Delicious, melty, chocolatey lava cake- in baked oats form

Prep time: 10 min

Bake time: 16-18 minutes

Servings: 2

  1. Ingredients:

    • 1/2 cup oats

      1/3 cup applesauce

      1/3 cup plant milk

      1 tsp cacao/cocoa powder

      2 tbsp maple syrup

      1 tsp baking powder

      1 tsp vanilla extract

      Filling-

      1/4 cup vegan chocolate chips

      2 tbsp plant milk

    Step-by-step:

1. Preheat oven to 350° Fahrenheit

  1. 2. To a blender, add in your oats, applesauce, plant milk (just the 1/3 cup), maple syrup, cacao powder, baking powder, and vanilla extract

  2. 3. Blend until smooth

  3. 4. Pour mixture into two oven safe ramekins

  4. 5. In a small saucepan on medium heat, melt together the chocolate chips and plant milk (2 tbsp)

  5. 6. Create a small hole in the center of the baked oats mixture, and pour the filling in

  6. 7. Place in oven and bake for 16-18 minutes

  7. 8. Allow to cool slightly, and enjoy!
