Pb & J Baked Oats (vegan)

A childhood favorite meets warm, melty, baked oats

Prep time: 10 min

Bake time: 18-20 minutes

Servings: 2

Ingredients:

  • - 1/2 cup oats (gluten free if desired)

    - 1/2 cup plant milk

    - 1 tbsp peanut butter (look for no added oils or sugars)

    - 1 tbsp maple syrup

    - 1 tsp baking powder

    - 1 tsp vanilla extract

    Filling:

    1 tbsp vegan jam or jelly of choice!

Step-by-step:

- Preheat oven to 350° Fahrenheit

  1. - To a blender, add in your oats, plant milk, peanut butter, coconut sugar, baking powder, and vanilla extract

  2. - Blend until smooth

  3. - Pour mixture into two oven safe ramekins

  4. - Pour approximately 1/2 tbsp of jam on the top of each

  5. - Place in oven and bake for 18-20 minutes (until golden brown on top)

  6. - Allow to cool slightly, and enjoy!
