Creamy broccoli pasta (vegan)

Ease the business of the week with this simple five step & five ingredient creamy healthy broccoli pasta!

Ingredients:

  • 1 pack of pasta (gluten free if desired)

    1 cup uncooked broccoli

    1 cup cashews (soaked overnight in room-temp water or 2 hours in hot water)

    1 cup veggie broth

    1/2 cup hummus

    Salt & pepper to taste

    Optional add in:

    2 tbsp nutritional yeast for "cheesy" flavor

Step-by-step:

1. Cook pasta according to package, adding in your broccoli 4-5 minutes before the pasta is supposed to be done

2. While the pasta is cooking, make your cashew cream by blending together your soaked and drained cashews with your veggie broth and hummus

3. Once the broccoli and pasta are done, drain and return to stovetop on low heat

4. Add in sauce, and stir together until warm

5. Add salt and pepper to taste, stir, serve, and enjoy!
