Creamy tomato sauce (vegan, gluten free, oil free)

Creamy, flavorful, plant based tomato sauce

  1. Ingredients:

    • One 28 oz can diced tomatoes (or two 15 oz cans; look for BPA-free containers)

      1 cup cashews

      1 cup veggie broth

      ¼ cup onion (chopped)

      2 cloves of garlic (minced)

      1-2 tbsp Italian seasoning

      Salt & pepper to taste

      Optional:

      Shredded basil (for blending into sauce and/or serving on top of pasta)

    Step-by-step:

    1. To a large saucepan on medium heat, add in your onion and garlic

    1. 2. Allow to cook for 4-5 minutes, using water to de-glaze the pan as needed

    2. 3. Add in your can of crushed tomatoes, water, salt, pepper, and Italian seasoning

    3. 4. Allow to simmer for 10-20 minutes

    4. 5. Carefully transfer the ingredients from the saucepan, along with your cashews, into a blender (be cautious not to overfill)

    5. 6. Blend until smooth, and then transfer to a heat-safe container for later, or use right away on a base of your choice
